What an amazing lesson into the Art of Nosing and Tasting,as a relative “newbie” to wines, this was the first time I really understood what to look for, when tasting the food and wine paired with it.
Nederburg Wine Makers Reserve, certainly didn’t disappoint and the talk was very informative by Natasha the winemaker,so humble be sure to check out Nederburg Wines,Harvest2015 on You Tube.
Tsogo Sun Sommelier, Georgio Meletiou, really made the evening so much fun and learning all about Nosing and Tasting has opened up my eyes and I cant wait for the next pairing,I will certainly look at it with a whole new approach.
Clarity of the wine-when researching I found that this generally refers to how much or how little the wine was refined during its production.
Swirling-now there are many ways of swirling and I have found that there is no right or wrong way, but you need to swirl the wine for atleast 5-10 seconds as this get’s oxygen into the wine, which those who know refer to as ‘opening up”.
Nosing-this refers to the smelling of the wine, the professionals, dip their nose into the upper portion of the wine glass and breathe in the aromas coming off of the wine.
And finally Taste-when pairing the wines with all the tasters set before us,you could very clearly taste which was a good pairing and what just didn’t work for you.
The Sauvignon Blance went beautifully with both the tomato & lime. Whilts the Pinotage needed the Banana Muffin. The Shiraz complimented the Pastry. The surprise of the evening for me was tea which was mistaken for everything but tea,but it went with Cabernet Sauvignon.
After the lesson we were treated to an awesome three course meal at the Peach Room at The Cullinan and boy was the food delish and moreish.
For the 1st course we had French Onion Soup with a toasted Gruyere Brioche paired with Nederburg’s Winemaster’s Reserve Chardonnay 2014
Mains was the most amazing wintery meal-Braised Pulled Lamb Shoulder with a Pea Puree, Pommes Dauphinoise and a Parisienne Vegetable Casserole paired with Nederburg Winemaster’s Reserve Merlot 2013
And my staple Dessert !! – Poached Pear with Walnut Malva Pudding, Butterscotch Sauce & Honey Comb Dust complimented by my personal favourite Nederburg Winemaster’s Reserve Noble Late Harvest 2012
